Combine heavy cream, sugar, and lemon zest in a saucepan.
Bring to a boil on medium-high heat, stirring constantly.
Reduce to a simmer and add lemon juice.
Continue to simmer for 3 minutes.
Remove from heat and let cool for 10 minutes.
Stir in vanilla. Pour into serving cups or ramekins.
Chill in fridge overnight, or until cold and firm.
Top with fresh berries and mint to serve.
