Lemon Posset

Equipment

  • 1 Saucepan
  • 8 ramekins or serving cups

Ingredients

  • 2 cups heavy cream
  • 2/3 cup sugar
  • 1 tbsp lemon zest from ~1 lemon
  • 6 tbsp lemon juice freshly squeeze, from ~2 lemons
  • 1 tsp vanilla extract

Instructions

  • Combine heavy cream, sugar, and lemon zest in a saucepan.
  • Bring to a boil on medium-high heat, stirring constantly.
  • Reduce to a simmer and add lemon juice.
  • Continue to simmer for 3 minutes.
  • Remove from heat and let cool for 10 minutes.
  • Stir in vanilla. Pour into serving cups or ramekins.
  • Chill in fridge overnight, or until cold and firm.
  • Top with fresh berries and mint to serve.
  • Enjoy!
